41 of #100daychallenge: fubu

 

Sometimes I get delusional and think that baking "healthy" treats makes me a better mom or a better person. It doesn't. I'm not very good at baking, with the exception of the occasional pie. I tried a gluten-free chocolate chip cookie recipe that really wasn't good and I got distracted and burnt them. I had started making a batter for some muffins made with steel cut oats and applesauce. They didn't turn out very well either. I don't think I cooked the steel cut oats long enough.

 

It works out better when I decide to just bake something and leave my insecurities and ego out of it. Some days, my lack of confidence in myself as a parent and functioning adult is debilitating and comical. 

 

A double baking fail is just what I needed to see how crazy I make myself sometimes. I'm over it...

 

 

I'm going to offer a teen workshop and I'm really excited about it! Even if just two people show up and one of them is my daughter, I'll be happy. Alright, I have to go and do some things. Tomorrow is the first day of high school!
